Mill-Free Pancakes (Blender Method)
No mill needed, just your blender and whole grains.

Ingredients

Step 1 (Blend First):

* 1½ cups water (or buttermilk or milk)
* 1 egg
* 2 Tbsp oil
* 1½ cups whole grain

Step 2 (Add After):

* 2 Tbsp sucanat or maple syrup
* ½ tsp salt
* ½ tsp cinnamon
* ½ tsp baking soda
* 2 tsp baking powder

Instructions

1. Add all Step 1 ingredients to a high-powered blender (like a Vitamix blender).
2. Blend for 30–60 seconds, until mostly smooth. (Check at 30 seconds and continue as needed—you want it smooth but not overworked.)
3. Add all Step 2 ingredients and blend briefly, just until combined (under 30 seconds).
4. Preheat a skillet over low–medium heat and lightly grease.
5. Pour batter onto the pan and cook until bubbles form and begin to pop.
6. Flip and cook until golden on the other side.
7. Serve warm with maple syrup.

* Our favorite blend: equal parts spelt, soft wheat, and kamut
* You can also use: rolled oats, rice, hard wheat, or millet

Optional: Soaked Version (Easier Digestion)

* Blend Step 1 (without the egg) and let sit overnight
* In the morning, add:
* Egg
* All Step 2 ingredients
* Blend and cook as usual

Magic GF Banana Cake
(Pesach favorite)

This quickly became a Pesach favorite this year.
I can’t make it fast enough before the entire pan is devoured.

Ingredients
• 2 bananas, mashed
• ⅓–½ cup sugar
• 2 eggs
• 2 Tbsp coconut oil
• 2 tsp cinnamon
• 1½ cups almond flour
• 2 tsp potato starch
• ¼ tsp baking powder
• ½ tsp baking soda
• 2 tsp apple cider vinegar
• Chocolate chips (optional)

Directions
1. Preheat oven to 315°F
2. Mash bananas + sugar
3. Mix in eggs + oil
4. Stir in dry ingredients
5. Add vinegar
6. Fold in chocolate chips
7. Pour into greased dish
8. Bake 35–45 min

Save this for later, you’ll want it again before the week is over (or even during the rest of the year 🤣)

Let’s cream some milk together. All you need is a ladle and cream line milk.

This NORA herbal infusion has been one of my favorite ways to add gentle nourishment to the day. Mineral-rich, grounding, and easy to sip hot or iced.
